Blueberry Walnut Smoothie

If you’re like me you made a promise to yourself that in 2016 you are going to make better food choices.  An easy way to make good on your promise is to start your day with my blueberry and walnut smoothie.   This smoothie is loaded with antioxidants, protein and good fats.

My mother picked up these fresh blueberries this summer.  I put them in the freezer for later use and they are definitely a treat during the winter months.  Blueberries are high in antioxidants which help to keep our brain healthy and walnuts are a great source of omega-3 fats, which support heart health and also help to protect us from prostate and breast cancer.  The coconut milk contains medium-chain fatty acids that aid in detoxifying the liver and the fat in coconut milk is not stored but is available for immediate energy.  This smoothie is delicious and nutritious.  Here’s to a healthier you in 2016.

Blueberry and Walnut Smoothie

1 cup of blueberries (frozen or fresh)

1/3 cup of walnuts

1/4 tsp. cinnamon

2/3 cup whole fat coconut milk

1/2 cup of water (or ice if berries are fresh)

1 tsp. vanilla

1 tsp honey ( or to taste)

1 scoop of protein powder (optional)

Makes approximately 2- 6 oz servings

Put all ingredients into blender and hit the smoothie button.  Now smile knowing that you’ve made a healthy choice for yourself.
