If you’re looking for an easy, low carb option for mashed potatoes here it is. Cauliflower is loaded with fiber, vitamins and minerals, so it’s super healthy. Plus it’s a yummy addition to my gluten free meatloaf.
Here’s the recipe.
1 head of cauliflower cut into pieces
1 TBS butter
1/2 cup sour cream
1/4 cup half and half
1/4 cup of grated Parmesan cheese
Cook the cauliflower in salted water until really tender. Drain it well.
Add remaining ingredients and mash until consistency of mash potatoes.
salt and pepper to taste.
Super easy, delicious and nutritious.
